Ageing Rooms

I LABORATORI DELL’ATTESA | AGEING ROOM TOURS: daily at 11:00, 12:30 and 15:30

We offer 45-minute guided tours every day, visiting the vinegar room, the bottling room and the dessert wine room, where the different production methods will be demonstrated.

In the vinegar room, where Vignamaggio’s crema di mosto is made, we reveal all the stages involved from cooking the grape must, through 30 years of slow ageing in ever-smaller oak barrels, to the final product.

In the bottling room, we explain how olives are picked, crushed in the olive presses and finally bottled.

Finally, guests see the vinsantaia, which contains the 21 vintages of Vignamaggio’s own dessert wine. Among the heady scent of sweet wine we explain how this typical Tuscan dessert wine, with a history that stretches back to the Renaissance, is made.

TOUR AND TASTING



A guided ageing room tour followed by a tasting. We offer two Chianti Classico wines, matched to a selection of Cinta Senese charcuterie, and matured cheeses matched to a selection of our organic jams and honey. To finish, you will taste our Vinsanto accompanied by homemade cantucci (Tuscan biscuits), made with our own organic flour.

TOUR AND LUNCH



A guided ageing room tour followed by a set lunch with a tasting of our olive oil and wines: two Chianti Classico, one IGT Toscana Rosso and Vinsanto.

The four wines are matched to each of four courses (starter, pasta course, main course, dessert). The dishes are chosen by our chef, and are made with seasonal produce from our own kitchen gardens.

TOUR AND AFTERNOON REFRESHMENT



A guided ageing room tour followed by a tasting of sweet treats: a glass of Vinsanto and two distilled liqueurs (Vinsanto acquavit and a blackberry, blackcurrant and raspberry liqueur), accompanied by a selection of cakes and our own organic fruits of the forest ice cream.
